Learners speak and the character answers in a real voice, then waits for them. Nobody gets to draft the perfect reply in a chat box, which is exactly what they can't do in the real room. Typing is there for anyone who needs it.
The other person has a reason
Every character holds something back: a sick parent, a boss who blamed them, a request refused once before. They only give it up if the conversation earns it, so a learner who rushes gets a polite "I'll do better" and a debrief that says so.
Scored against what you set
You describe what poor, OK and good look like for each skill, in behaviour you could see in a transcript. The debrief quotes the conversation back as evidence, so "7 out of 10" means something the learner can act on.
